“No flour, no Torah; no Torah, no flour.” – Pirkei Avot 3:21
½ cup sugar
1 teaspoon dried lavender
1 cup parve margarine
pinch of salt
2 teaspoons lemon zest
2 cups all-purpose flour
Preheat the oven to 350° F.
Combine the sugar and lavender in a clean coffee or spice grinder. Grind to a fine powder.
Cream the butter and sugar mixture until fluffy. Stir in the salt and lemon zest. Add the flour ½ cup at a time, mixing to combine. Form the dough into a cylinder about 1½ inches in diameter. Wrap in wax paper and chill 30 minutes or until firm.
Carefully cut ¼-inch thick slices from the chilled cylinder. Place the slices on a ungreased cookie sheet. Bake for 8-10 minutes.
Remove the cookies from the oven. Cool before stacking.
Makes 4 dozen.
