Preheat the oven to 375º F.
Cut whatever quantity of bread you’re using into cubes of the desired size. Spread the cubed bread in a single layer on a baking sheet.
Drizzle with olive oil and fresh or dried herbs, if desired.
Bake for 15 minutes or until the croutons are fully dry and slightly golden.
Cool and store in airtight containers.
Baked croutons are a great way to recycle stale bread. Here are a few ways to use them: tossed in a salad; as a featured ingredient in a rustic soup; as a main ingredient in a bread stuffing; ground into crumbs for breading vegetables, fish or meat.
