“No flour, no Torah; no Torah, no flour.” - Pirkei Avot 3:21
¾ cup pure maple syrup
¾ cup water
6 tart apples, peeled and sliced thinly
1 teaspoon cinnamon
¼ teaspoon allspice
Combine the maple syrup and water in a medium saucepan. Bring to a boil. Continue boiling for 2-3 minutes. Add the apples, cinnamon, and allspice. Cook over medium high heat, stirring occasionally and then mashing, until the apples dissolve into sauce and most of the liquid is absorbed.
For a smooth applesauce, cool and then puree in a food processor.
Makes about 1 quart.

I enjoy the addition of pure maple syrup! Adds an earthy sweetness that definitly complements the sweet apple flavor.

Me, too, Al. We were just eating some apples from the tree in my sister’s backyard the other day. Delicious (oops, Gravenstein)!
